Recipe: Coconut Chia Berry Pudding

400 ml coconut cream
1 cup frozen berries (whatever you like)
2 tablespoons maple syrup
1 teaspoon vanilla extract
4 tablespoons chia seeds


1.Place the coconut cream, berries, maple syrup and vanilla extract and half the chia seeds (2 tbsp) in a blender or food processor. whizz for a 10 seconds or so. 
2.Add the remaining chia seeds and stir through to combine ensuring there are no lumps.
3.Pour the mixture into four serving jars and place in the fridge to set for a minimum of 3 hours.
