Recipe: Chicken Coconut & Cashew Curry

Slow Cooker you are about to get turned on! This curry is a crowd pleaser. A coconutty, creamy, deliciousness combination. Go mild or kick it with some Cayenne pepper - your choice. Whatever you choose - it rocks.

  • 3 Chicken, breast
  • 1 red pepper (sliced)
  • 2 potatoes (small white or red)
  • half white onion
  • 2 cups chicken broth
  • 2 cups coconut milk
  • 3 tablespoon yellow curry powder
  • 1 teaspoon cumin powder
  • half teaspoon salt
  • half teaspoon cayenne pepper


    1. Add chicken pieces, red peppers, potatoes, and onions to the slow cooker.
    2. In a bowl whisk together chicken broth, curry powder, cumin, salt, and cayenne pepper. (If you like your curry without the kick - leave this out!)  Pour mixture into slow cooker and stir to coat chicken and veggies. Cover and cook on high for 2-3 hours or on low 4-5 hours.
    3. About 10-15 minutes before serving, stir in coconut milk. Stir just before serving and top with cashews and freshly chopped coriander.
    4. Serve with rice - enjoy!
